Mango Salsa (and how to cut a mango!)



This salsa didn't last long. The flavors all mend together so perfectly...I served this with my homemade baked tortilla chips.


1 mango
½ cucumber, diced
¼ red onion, diced
½ jalapeno, diced
1 TB lime juice
⅓ C cilantro, chopped
salt/pepper to taste

Peel and chop the mango. Toss with remaining ingredients.

How to cut a mango:

Slice the "cheeks" off the sides, and cut criss-cross marks into the flesh. Invert the slice, and trim the cubes out.

Good tutorial on how to cut a mango. I've never actually had a mango salsa despite it's popularity. I've never had a fruit salsa period (I know I know, tomatoes a fruit, but you know what I mean). It's a food prejudice that I just have to get over. I just THINK I won't like it.

I made this and serve it with grilled chicken and roasted veggies. It added so much flavor to everything. Delicious! While I might not comment very often your blog is one of my favorites and I always look forward to seeing what you'll post for me to try!
