Another finger food I made for the year-end celebration at Lilly's school. They are super easy and adorable! Made with puff pastry sheets from any freezer section.- 1 puff pastry sheet
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 small onion, chopped
- 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1/2 cup crumbled feta cheese (plain or flavored)
- 1/4 teaspoon ground black pepper
Thaw the puff pastry for 20 mins at room temp. Heat oven to 400.
Place the pastry on a floured surface and slice into squares about 2x2 inches with a pizza cutter. Should make 36 squares.
In a saucepan, saute the garlic and onion in the olive oil til translucent. Add spinach and cook for 3 mins. Set aside.
Press the squares into a mini muffin pan and bake for 10 minutes or til golden.
Remove from oven, and place a teaspoon or so of the spinach mixture in each cup. Top with crumbled feta. Place back in oven for 5 more minutes, or until filling is hot.
Can be served warm or at room temp. These were a hit!
